Quick Baked Beans
 
 
Ingredients
  • 1 tablespoon olive oil
  • 1 small yellow onion (or ½ of a large one), minced
  • 3 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • ¼ teaspoon cumin
  • ½ teaspoon kosher salt
  • ¼ ground black pepper
  • 2 15-ounce cans of beans, drained and rinsed (I used a mix of red kidney and cannelini beans, but white navy beans or even garbanzo beans would work too!)
  • 3 tablespoons ketchup
  • 2 tablespoons dark brown sugar
  • 2 tablespoons apple cider vinegar
  • 1 teaspoon hot sauce (I used Chipotle Tabasco to enhance the smokiness)
  • 1 tablespoon Worcestershire sauce
  • 2 teaspoons soy sauce
  • ½ cup water
Instructions
  1. Heat oil in a medium saucepan over medium-low heat. Add onion and saute slowly until soft, about 5 to 8 minutes. Add garlic, paprika, cumin, salt and pepper and cook for another 2 to 3 minutes.
  2. Add beans, ketchup, sugar, vinegar, hot sauce, Worcestershire sauce, soy sauce and water and stir to combine. Increase heat to medium-high and bring mixture to a boil. Reduce heat back to medium-low and simmer, stirring occasionally, until the sauce becomes thick, about 10 minutes. Adjust seasoning with salt and pepper to taste.
