Bacon Shallot Jam
 
 
Ingredients
  • 4 slices bacon
  • 1 pound shallots, thinly sliced
  • 5 - 6 fresh thyme sprigs
  • kosher salt and black pepper, to taste
  • ¼ cup granulated sugar
  • ¼ cup balsamic vinegar
  • 1 cup vegetable stock (in a pinch, water works too)
Instructions
  1. In a heavy duty pot over medium heat, cook the bacon until crisp, about 5 - 7 minutes. Remove the bacon and reserve for another use.
  2. Reduce heat to medium-low and saute shallots with the thyme until translucent, about 5 minutes. Add sugar and salt and pepper to taste, and cook for another ten minutes.
  3. Add vinegar and stock and increase heat to medium. Once liquid comes to a boil, reduce heat to low and simmer until liquid is nearly evaporated, about 15 minutes.
  4. Season to taste with more salt and pepper if necessary. Serve at room temperature or store in canning jars.
