Irish Soda Bread
 
 
Ingredients
  • 19 ounces (about 3 cups) Gluten-Free All-Purpose Flour Blend
  • 2 teaspoons xanthan gum
  • 2 tablespoons granulated sugar
  • 1½ teaspoons baking soda
  • 1½ teaspoons cream of tartar
  • 1 teaspoon table salt
  • 4 tablespoons (½ stick) unsalted butter, melted
  • 1¾ cups buttermilk divided
Instructions
  1. Heat oven to 400 degrees with a rack in the upper-middle position. Whisk together the flour, xanthan gum, sugar, baking soda, cream of tartar and salt in a large bowl. Combine buttermilk and melted butter in small bowl (we just used a large measuring cup) stirring until butter forms small clumps.
  2. Add the wet ingredients to the dry ingredients and stir until the dough just begins to come together. Turn out onto a work surface and pat together to form 6-inch round; dough will be scrappy and uneven.
  3. Place dough in 12-inch cast-iron skillet. Score deep cross, about 5 inches long and ¾ inch deep, on top of loaf and place in oven. Bake until nicely browned and knife inserted in center of loaf comes out clean, 40 to 45 minutes. Remove from oven and brush with melted butter. Let cool at least 30 minutes before serving.
