Peach Shrub and Bourbon Peach Tea
 
 
Ingredients
  • For the Shrub:
  • 1 pound peaches, pitted and sliced
  • 1 cup dark brown sugar
  • ¾ cup white wine vinegar
  • For the Bourbon Peach Tea:
  • 1 ounce bourbon
  • 1 ounce peach shrub
  • 2 ounces iced tea
  • Juice from ½ a lemon
  • 2 mint leaves, plus more for garnish
  • 2 thin peach slices, for garnish
Instructions
  1. For the shrub, in a large bowl, mix the peaches and brown sugar. Cover and refrigerate overnight.
  2. Add the vinegar and stir to combine. Cover and refrigerate at least 2 days.
  3. Strain the shrub mixture through a fine mesh sieve and store in clean glass jars. The shrub should keep refrigerated 2 to 3 weeks.
  4. For the Bourbon Peach Tea, in a cocktail shaker with ice, combine bourbon, peach shrub, iced tea, lemon juice and mint. Shake well and strain into a glass filled with ice. Garnish with peach slices and additional mint leaves.
