Meat Sauce with Beef Bones
 
 
Ingredients
  • 1 pound beef bones with marrow
  • 2 tablespoons olive oil
  • 1 pound ground meat (I used a pork/beef/veal combo)
  • Salt and pepper to taste
  • ½ cup red wine
  • Pinch of sugar
  • 1 (28 ounce) can whole peeled tomatoes
  • 1 medium onion, peeled and sliced in half
  • To serve:
  • 1 pound pasta, cooked
  • Freshly grated Parmesan
Instructions
  1. Preheat the oven to 400°F. Place the beef bones on a rimmed baking sheet and roast for 30 minutes.
  2. While the bones roast, heat the olive oil in a large stockpot over medium heat. Add the ground meat and season with salt and pepper. Cook the meat until browned, stirring occasionally, about 5 to 8 minutes.
  3. Add the red wine and sugar and cook until wine has evaporated, about another 5 minutes.
  4. Add the tomatoes, onion, and roasted beef bones (along with any rendered fat) to the pot. Bring to a boil, then reduce heat to low. Simmer gently for at least 1 hour, stirring occasionally and crushing the tomatoes against the side of the pot with a wooden spoon.
  5. Remove the bones and onion. Toss the cooked pasta with the sauce and garnish with some grated Parmesan cheese.
