Tri-Color Carrot “Home Fries”
 
 
Ingredients
  • 2 pounds tri-color carrots, rinsed really well, ends trimmed and sliced into ½-inch thick slices
  • 3 tablespoons olive oil
  • 1 teaspoon dried thyme
  • ¼ teaspoon dried sage
  • 1 teaspoon kosher salt
  • ½ teaspoon ground black pepper
  • ½ teaspoon granulated sugar
Instructions
  1. Preheat oven to 450 degrees F.
  2. In a large bowl, toss together the carrots, oil, thyme, sagee, salt, pepper and sugar. Spread evenly on a baking sheet lined with aluminum foil.
  3. Bake until carrots are crispy and beginning to brown around the edges, 20 to 25 minutes, flipping them halfway through cooking.
